Zucchini Bread =============== Makes 2 loaves Ingredients ----------- 3 cups all-purpose flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoons baking powder 2 tablespoon cinnamon 3 large eggs 1 cup vegetable oil 2 1/4 cup sugar (I used 2 cups) 3 teaspoons vanilla extract 2 cups grated zucchini (about 2 medium-sized) - Peel if skin is thick. Scope out seeds if large or soft middle. Optional extras: 1 cup chopped nuts, 1 cup raisins, or 1 cup chocolate chips Nonstick spray or butter for greasing the pans Equipment --------- 2 8x4-inch loaf pans Instructions ------------ 1. Heat the oven to 325°F. Grease and flour two 8x4-inch loaf pans. 2. Sift + Combine the flour, salt, baking power, soda and cinnamon in a bowl (I just mixed with whisk until no clumps and well mixed) 3. Beat Eggs, oil, vanilla and sugar in large bowl. Add sifted ingredients to creame mixture and beat well. 4. Stir in zucchini and nuts until well combined. 5. Pour into pans and bake 40-60 minutes until toothpick comes out clean 6. Cool on rack 20 min. Remove from pan.
